A local restaurant near me made this and I’ve been hooked ever since! So, I decided to make it myself. It’s incredibly simple, super delicious, and super filling!
Ingredients:
- Sushi rice (I got this from the local restaurant and usually you can buy it from a sushi restaurant, but if you can’t. Cook the rice as normal and mix in rice vinegar and sugar once it’s cooked (this is to taste, I typically just eyeball about 2 tbsp rice vinegar and 1-2 tsp sugar))
- Imitation crab meat (this is the only brand I’ll use for sushi)
- Spicy mayo (I recommend Japanese kewpie mayo, but regular will work with either cayenne pepper or sriracha)
- Masago or fish roe
- Furikake or strips of seaweed and sesame seeds

First, I start by lining my tray because I’m lazy and try to avoid as many dishes as possible. This is a 9×9 tray, but any bake-able dish will work!

Next, I cut up my imitation crab sticks into thirds. I chose this because that’s what I had on hand. But fish would work as well. For fish, I would recommend cubing them.

Then, I mixed in about 4 tbsp of spicy mayo mix with 4 tbsp of masago. This amount is really up to your liking, but I always opt for more mayo because it tends to dry out in the oven and the cropper it is, the better!

Next is assembly! I start with sushi rice, a layer of mix, then rice, then mix, then top with more masago and furikake! I forgot the green onions, but that would be extra tasty as well and add really great color to the dish!
Cover it with foil so it doesn’t dry out and bake for 30 minutes at 350 degrees!

I know it doesn’t look much different, but the mayo mixture emulsifies and is really creamy and tasty! I highly recommend you try this dish out! It definitely isn’t the healthiest, so I recommend having it for a cheat meal if you’re trying to eat on the healthier side. If you try this recipe out, make sure to tag me on Facebook or Instagram!
